Second Cooking Class A Success!!

“Macke’s Restaurant in Grace’s Plaza hosted an evening cooking class of “All About Fish” to benefit the Susan G Komen For The Cure-Greater Nashville Affiliate on Tuesday, January 27th in their Loggia. This evening, however, was an evening under the stars where guests were transported to the seaside of Spain. While the 35 guests arrived, they were served champagnes and oven-dried tomato-goat cheese empanadas. Representatives from Lipman Brothers began the evening by showing guests how to make Sangria, then pitchers were placed on tables for their enjoyment. What a festive way to use opened red wine! Chef Toby and Sous Chef Caleb Phillips started the cooking section of the class by teaching general information about how to select and store fish. The class then moved on to the various methods of cooking fish such as grilling, poaching, and searing. Samples of seared tuna and salmon en papillote were then served. Next various accompaniments for fish such as preserved lemons, creme fraiche, herb-infused oils, remoulade and more were demonstrated (and sampled)! For the grand finale of the fish, Chef  Toby utilized several types of seafood teaching guests how to make a traditional Spanish paella….The evening was topped off with the perfect ending to a seafood meal-a light Pomegranate sorbet. All guests left with more knowledge about both cooking and breast health awareness, as well as fun Valentine themed goody bags and a serving of the best quality red saffron for them to make their paella at home!”
