“Chef Toby Willis of Macke’s said he finds inspiration in the change of seasons, his early food memories and the local product. But he also looks to a couple statements from a book by chef André Soltner of Lutèce in New York City. True chefs are gift-givers by nature, Soltner asserts. Hearing him explain his talent allowed Willis to “believe in myself and trust my instincts as a cook.””
